Cépagement: 40% Clairette, 25% Grenache Blanc, 15% Picpou, 10% Roussanne, 10% other grape varieties

Soil: Selection of several plots on the four types of soils of the appellation: rolled pebbles, sandy soils, clay soils and limestone

Upbringing: A unique method: barrels were immersed in Xavier's creation, the 7000 litre Vinarium®, a wooden truncated tank, completely protected from oxygen (wine was added to the tank, outside the barrels). This wine was aged under pressure in immersion for 30 months.
