Upbringing: Hand harvesting - determination of harvest dates is based on polyphenol analysis and daily tastings. 85% destemmed - 15% left on the stems. Long maceration with no mechanical extraction Fermentation and ageing in truncated vat (this allows the "cap" to loosen easily during pump-overs, ensuring softer extraction). Ageing is for more than 5 years with a tight oxygen protection management.
