A highly aromatic wine, the Négrette grape offers something completely but intoxicatingly different. Very dark, quite spicy but highly perfumed nose with a thick texture, juicy and sweet red fruits and a hint of oak. 2005 was an exceptional year with a very late harvest producing concentration without loss of acidity and great balance.
The wine is a fruit bomb, literally exploding in the mouth with the highly perfumed Négrette taking centre stage as expected. Nicely oaked too. The wine is now drinking superbly.
2008 to 2017
50% Négrette, 25% Cabernet Sauvignon, 25 % Syrah (35-year-old vines harvested under 40hl/ha)
The vinification, after total destalking, takes place in thermo-regulated stainless steel tanks. The fermentation temperatures range from 26 to 30 °C. In order to obtain maximum fruit, suppleness and extraction from each of the grape varieties. After the malolactic fermentation, the wine spends 12 months in oak barrels from the Allier Forest. A racking is done every 3 months and at the end of the 12 months, the blending is done in big oak barrels of 50 hl during 12 months.
