Tasting Notes: One of our personal favourites, “Les Chabriles” is a Grenach/Syrah blend that drinks well when the Grenache dominates in its youth but grows over a period of time with the Syrah taking over. Recently tasted, the 2000 vintage has Northern Rhône notes. | Drinking Dates: 2011 to 2016 | Cépagement: 65% Grenache, 35% Syrah (28hl/ha). | Upbringing: 100 % hand-picked and selected. Destalking, no yeast-added, cold pre-fermentation during 3 weeks with daily "pigeage" and temperatures maintained at 31°C. Matured 60% in vats, 40% in two years old oak casks "demi-muids" for a year.
