Tasting Notes: Very carefully selected to be the pinnacle of what St Joseph has to offer. The selections are at the start of the process, following the harvest, and again at the end, prior to bottling. This is apparent in the great concentration and complexity found in this wonderful wine.

Cold maceration before fermentation, alcoholic fermentation at 35°C. Maceration at 30°C after fermentation. Malolactic fermentation in barrels.
Cap punching three times a day, as well as pumping over and release techniques skilfully extracting aromas and tannins. Placed in barrels before the malo-lactic fermentation, the wine combines well with oak, producing pleasant melted aromas. Aged 18 months in Allier and Nevers oak barrels, 100% new. | ABV: 13% |
