Tasting Notes: Deep ruby-red. Rich and dense with plenty of black fruit jam (cherries and blackberries), spice and liquorice. Voluptuous and full on the palate, underpinned by a tight but fine tannic structure that needs a little time but promises to open well. An excellent 'Seraphin'. | Drinking Dates: 2016 to 2021 | Cépagement: 100% Grenache | Upbringing: The grapes were hand-picked between the second week of September and early October and then crushed and de-stemmed before being fermented in an open tank, with regular punch downs, throughout the fermentation period. Further maceration was conducted for four weeks to facilitate the full extraction and softening of the tannins. After pressing and malolactic fermentation, the wine was aged in tank for a year to preserve its rich fruit flavours and was then very lightly filtered before bottling. | ABV: 15% | Critic Reviews: 'The 2011 Ventoux Seraphin is a classic, textbook Ventoux that offers massive spice, pine bough, cracked pepper and underbrush that’s ground by a core of sweet fruit. Medium to full-bodied, supple and beautifully textured, it finishes with chewy, savory tannin.
