Long maceration with no mechanical extraction Fermentation and ageeing in vat (cuve Tronconnique) Ageeing for more then 5 years with a tight oxygen protec- tion management | ABV: 14.5% | Critic Reviews: 'So much cassis and blue fruits on the nose with hints of blos-soms and wafers. It’s full-bodied with plush tannins. Rich with dark chocolate and dark berries on the palate. Focused peppery finish. Drink or hold.' 92/100 (James Suckling) | Food: Beef, pork, duck |
