| Drinking Dates: 2024 to 2027 | Cépagement: 50% Viognier, 20% Grenache, 20% Roussanne, 10% Picpoul | Soil: Sandy white marl, clay/chalk | Upbringing: Following the harvest at optimal maturity, the grapes were destemmed, followed by cold skin maceration in order to extract the primary aromas as much as possible. This was followed by light pressing then stirring on lees until January 2024 (three months). Aged in demi-muids for Roussanne, the rest in stainless steel vats. | ABV: 13.5% | Food: Light soup, risotto, quiche etc. |
